Job Description

This is a recruitment opportunity for the first Wedding Hall in Vietnam launched by UMOMENT — Korea’s No.1 wedding group known for Apelgamo and The Chapel at Cheongdam. WEDDINGBOOK is supporting UMOMENT as a recruitment partner for this position.

Set to open in 2025 in Ho Chi Minh City, the venue is envisioned as Vietnam’s first-ever 5-star wedding hall, redefining the standard for wedding and banquet services in Southeast Asia. At the heart of this vision is a premium culinary experience that matches the elegance of the space itself.

We are looking for a Vietnamese Head Chef to lead the kitchen from day one — someone who brings not only culinary expertise and leadership, but also the passion to create unforgettable dining moments for couples and guests alike. This is a rare opportunity to take on a founding role in a landmark project that blends fine dining, hospitality, and high-end wedding culture.

Key Responsibilities

- Oversee the entire kitchen operations for the wedding and banquet halls

- Develop and propose tailored menus for weddings and private events

- Create seasonal and event-specific menus and continuously optimize operations

- Upgrade menus based on culinary trends and customer feedback

- Manage and lead the kitchen team, including local staff

- Monitor food cost and quality, ensure hygiene and safety compliance

Job Requirement

Qualifications

- Minimum 5 years of experience in large-scale kitchen operations (e.g., hotels, high-end restaurants, convention centers)

- Strong leadership experience as a Head Chef or Kitchen Team Leader

- Hands-on experience in pre-opening projects — including kitchen setup, workflow design, and SOP development — is highly preferred

- Candidates who are not yet at Head Chef level but have played a key role in pre-opening phases may still be considered

- Language: Proficiency in English or Korean is a strong advantage

Preferred Qualifications

- Culinary license holder (Korean, Western, Japanese cuisine, etc.)

- Certified in food hygiene and safety management

- Experience working abroad and understanding of local cultures

- Background in global brands or high-end banquets

- Degree in Culinary Arts or a related field
